The Easiest Best Banana Muffins
Get ready to turn those bananas from "meh" to "muffin-tastic"! These banana muffins are so good, even the pickiest little monkeys will be begging for more. Let's bake up some smiles!
Ingredients
1½ cups flour
1 tsp baking powder
1 tsp baking soda
½ tsp salt
1 tsp cinnamon
¼ tsp nutmeg
1½ cups mashed banana (about 4 medium bananas)
6 tbsp softened butter
⅔ cup brown sugar
1 large egg
1 tsp vanilla extract
2 tbsp milk
Optional: 1 cup chocolate chips and/or walnuts
DIRECTIONS
Preheat Oven and Prepare Pan: Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Lightly spray a 12-count muffin pan with non-stick cooking spray.
Prepare Dry Ingredients: In a medium bowl, whisk together 1½ cups of flour, 1 teaspoon of baking powder, 1 teaspoon of baking soda, ½ teaspoon of salt, 1 teaspoon of cinnamon, and ¼ teaspoon of nutmeg. Set aside.
Prepare Wet Ingredients: In a large bowl, mash 1½ cups of mashed bananas (about 4 medium bananas) until smooth. Add 6 tablespoons of softened butter, ⅔ cup of brown sugar, 1 large egg, 1 teaspoon of vanilla extract, and 2 tablespoons of milk to the mashed bananas. Beat together until well combined.
Combine Dry and Wet Ingredients: Add the dry ingredients to the wet ingredients in the large bowl. Stir or beat until just combined, making sure not to overmix.
Add Optional Ingredients: If desired, fold in 1 cup of chocolate chips and/or chopped walnuts into the batter until evenly distributed.
Fill Muffin Tin: Spoon the batter evenly into the prepared muffin tin, filling each cup almost to the top.
Bake: Place the muffin tin in the preheated oven and bake at 425 degrees Fahrenheit (220 degrees Celsius) for 5 minutes. After 5 minutes, reduce the oven temperature to 350 degrees Fahrenheit (175 degrees Celsius) without opening the oven door, and continue baking for an additional 16-18 minutes or until the muffins are golden brown and a toothpick inserted into the center comes out clean.
Cool and Enjoy: Remove the muffins from the oven and allow them to cool in the pan for 5 minutes. Then transfer the muffins to a wire rack to cool completely, or enjoy them warm!
